Cranberry Walnut Chicken Salad

So, I had some leftover chicken and I decided to make some chicken salad. My usual method for making it usually involves throwing random things together and not paying attention to how much and all of that. This time, I thought I'd actually take more notice so I could share the recipe.  It was delicious, by the way. :)  Enjoy!

Cranberry Walnut Chicken Salad

INGREDIENTS:

2 cups of leftover chicken
1/2 cup dried cranberries
1/2 cup diced celery
1/4 cup chopped walnuts
2 Tablespoon finely chopped red onion
1/8 teaspoon ground black pepper
Juice from half of a lemon (around 2 teaspoons)
1/4 cup to 3/4 cup mayonnaise depending on preferred creaminess (mine had just a little over 1/4 cup) 

DIRECTIONS

-Add all but the last three ingredients in a bowl and mix with a fork to evenly distribute. 
-In a separate bowl, mix mayo, lemon juice, and black pepper until well blended then add to other bowl of ingredients.
-Stir well.
-Add additional amounts of ingredients to taste.
-Refrigerate for at least 1 hour (overnight preferred).

  1. I have been drinking the fresh cranberry juice in routine which is having all the nutrients that are important for every person. Taking this juice in routine is keeping me healthy.
